The Everything Salad with Balsamic Vinaigrette

I try to keep a few homemade dressings in the fridge at all times to simplify my day-to-day eats. This balsamic vinaigrette is one of my staples, because it tastes good with just about anything (and everything, as above). It will make a big batch and can be stored in the fridge for weeks.

Serves 2 (meal size)
INGREDIENTS
For the Dressing:
1/2 cup balsamic vinegar
1 cup extra virgin olive oil
1/2 tsp dijon mustard
1/4 tsp dried Italian herbs (or basil and oregano)
1/2 tsp honey
For the Salad: Basically anything goes. Pictured above is:
4 cups red leaf lettuce
1/2 cup shredded carrots
1 cup chopped cucumber
1 yellow pepper, thinly sliced
1/2 large avocado
1/8 cup unsweetened, dried cranberries
1/8 cup pine nuts (any nuts work - especially candied pecans)
1/4 cup corn
1/4 cup crumbled feta
1 chicken breast, cooked and shredded
METHOD
Combine all ingredients and blend well. Enjoy over salad fixings of your choice.
