Everyday Green Smoothie

I love knowing that I have had over half my daily vegetable requirements before 9am. It gives me that accomplished, I-am-so-the-main-character-in-my-own-life kind of feeling and I just become naturally more productive and energized. For the past 3+ years, this smoothie has been a staple in my diet. Whether it's my breakfast when rushing to school or my busy-day snack between work and evening commitments, it is always my go-to. 

 

Green smoothies sometimes think they can get their street cred by having a token vegetable thrown into a sea of fruit. Although fruits are nutritious and high in fibre, when multiple servings are packed into a smoothie (lets say a whole banana and berries) it ends up being concentrated with sugar. This smoothie is mostly veggies with less than a serving of fruit to sweeten it up, and it still tastes great. However, if you are used to fruit-heavy smoothies, you could try adding a little honey, dates or extra fruit to sweeten it initially, but my bet is that you probably wont need it.

 

Helpful Hint: because of the ginger and lime, this smoothie keeps well. If you are short on time, make a few at the start of the week to keep you going! Be sure to blend them ahead of time if you are making them in advance so the ginger and lime are mixed in with the ingredients.

Serves 1

 

INGREDIENTS

1 1/2 cups spinach or kale, packed well

3 inch segment of a long english cucumber

1/4 avocado

1/4 to 1/2 cups fruit (mixed berries or mango are my favourite)

4-6 mint leaves

1 tbsp fresh ginger, peeled

Juice of 1/2 of a fresh lime

3/4 cup coconut water

1/2 cup greek yogurt

1 tsp milled flax seed (optional)

 

METHOD

Pack greens into bottom of blender.

Add cucumber, avocado, fruit, mint, ginger, lime juice and greek yogurt and coconut water.

Blend well and enjoy!
