Plum Spice Overnight Oats

My Bircher Muesli is one of my favourite run-out-the-door breakfasts.

To spice things up as the weather gets crisp I have been enjoying these overnight oats with plum, nutmeg, chia, hemp and greek yogurt. It is still packed with plenty of fibre, protein and fat to keep you going until lunch!

Serves 2


  • 3 tbsp hemp hearts

  • 1 tbsp chia seeds

  • 1/4 cup chopped walnuts

  • 1/8 tsp ground nutmeg

  • 1 tbsp honey

  • 1/2 tsp brown sugar  

Ingredients

  • 1 cup large oat flakes

  • 2/3 cup unsweetened almond milk (I use the unsweetened vanilla)

  • 2/3 cup greek yogurt

  • 1 ripe plum, finely chopped


Method

  1. In a bowl, combine oats, milk, yogurt, plum, hemp, chia, walnuts, honey and nutmeg and mix well.

  2. Leave in fridge for at least 30 minutes (or overnight), sprinkle with brown sugar and enjoy!
