Caesar Salad Dressing

Caesar salad can have a bad rep. It’s an easy side to throw with any entree and some skeptics might say it barely qualifies as salad but rather lettuce drenched in a high-fat dressing. 

I like caesar salad as much as the next person, unless that person is my sister who has this great affinity for this stuff. This dressing is great, because when you make your own dressing you know what is going into it. Enjoy it with the lettuce of your choice, but if you pick kale, you can dress a batch of it and the leftovers will not get soggy...#winning. 

Tips & Tricks:

Try serving your caesar salad with parmesan crisps (pictured above). To make them spread shredded parmesan on a baking sheet with some chilli flakes and broil until bubbling (keep a close eye and remove before it starts to brown). Crack it over your salad when you are ready to serve!

  • 2-3 garlic cloves (or more if you're feeling brave)

  • Juice of 1 lemon

  • Chilli sauce to taste (tabasco, sriracha, anything)

  • 1-2 tbsp grated parmesan (optional, add to make it more creamy)  

Ingredients

  • 1/2 cup olive oil

  • 2 tsp white wine vinegar

  • 2 tsp red wine vinegar 

  • 2 tsp Worcestershire sauce 

  • 1 egg yolk

  • 1/2 tsp dry mustard powder


Method

  1. Blend all ingredients well.
