Chocolate Peanut Butter Energy Balls

These bite are the solution to my busy day problems. 

I find that whenever things get a little too hectic, my fridge tends to look a little sparse, which sometimes leads to downgraded snacks. With these, I make 1 batch (30 bites) and freeze them all, pulling them out as I need them. With oats, hemp hearts, chia seeds, peanut butter and dark chocolate, these bites pack in lots of protein, healthy fats and fibre to keep you going whether you are running to the gym, running errands or just running show. These are quite energy dense, so stick to 1-2 bites per snack.

  • 2 tbsp chia seeds

  • 1 cup hemp hearts 

  • 1/4 cup honey

  • 1/4 cup coconut oil

Ingredients

  • 1 cup rolled oats

  • 1/2 cup natural peanut butter

  • 1/2 cup milled flax 

  • 1/2 cup dark chocolate chips

  • 1 tsp vanilla


Method

  1. Place oatmeal, flax, chocolate chips, chia seeds and hemp hearts in a bowl and mix well. 

  2. Add vanilla, honey and coconut oil and stir until mixture starts to stick together.

  3. Roll mixture in to 2x2cm balls.

  4. Place bites in a container making sure they don't overlap and stick together. 

  5. Freeze the bites and pull them out as needed for snacking!
