Turkey Frittata Muffins

It's dark in the morning, which means some days I end up staying in bed a little longer than planned.

To maintain my regular routine I often make these turkey frittata muffins for breakfast (but really, they are great for any meal). They also freeze well, which makes them perfect for the mornings I wake up late and unorganized because all I have to do is reheat them before I run out the door!

  • 1 cup part skim shredded mozzarella

  • 1 tbsp chives (to garnish)

  • Salt and pepper to taste.

Ingredients

  • 9 small turkey sausages, casings removed (about 8 oz)

  • 8 eggs

  • 2 cups broccoli (small florets)

  • 1/4 cup sun-dried tomatoes, thinly sliced


Method

  1. Preheat the oven to 350 degrees.

  2. Break turkey sausage (casings removed) into small chunks.

  3. Place turkey in frying pan over medium heat until cooked through.

  4. Mix eggs, broccoli, sun-dried tomatoes and mozzarella in a large mixing bowl.

  5. Once cooked, add turkey to mixture.

  6. Distribute mixture into a greased muffin tin.

  7. Garnish each muffin by sprinkling chives on top.

  8. Bake in oven until cooked through, about 25 to 30 minutes.
