Berry Quinoa Porridge

Happy New Year Fellow Foodies! I know it is a bit late, but I am back and ready to assist with all your breakfast goals. 

This quinoa porridge is the perfect for those of you who want to make breakfast on the weekend and reap the benefits the whole week. Yes. Batch cook it. It’s easy, healthy and will make these darker mornings a little bit brighter. Plus, its packed with fruit, fibre, healthy fats and protein to keep you going until lunch.

Serves 2


  • 1/2 cup berries of your choice

  • 3 tbsp hemp hearts

  • 1 tsp maple syrup

  • 1/2 tsp vanilla (optional)

Ingredients

  • 1/2 cup quinoa

  • 1 cup unsweetened almond milk, plus 1/2 cup extra for serving

  • 1/8 tsp cinnamon


Method

  1. Rinse quinoa and set aside.

  2. Bring almond milk to a boil over medium heat.

  3. Add quinoa to almond milk and simmer for 20 minutes or until quinoa is cooked, stirring frequently.

  4. When cooked, add cinnamon, berries, hemp hearts, maple syrup and vanilla and mix well. 

  5. Split into bowls and serve warm with almond milk poured on top (1/4 cup should be enough).
